Bananas Foster French Toast

Ingredients
- 12 slices brioche bread (or your favorite bread)
- 6 tablespoons butter
- Custard:
- 4 eggs
- 2 tablespoons granulated sugar
- 1 1/2 cups half and half or milk
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon vanilla
- Topping:
- 6 tablespoons butter
- 1/2 cup packed brown sugar
- 1/4 cup maple syrup
- 1/4 cup rum
- 2 firm bananas, peeled and sliced
Instructions
- To make the custard, combine all the ingredients in a shallow dish.
- To make the topping, melt the butter in a skillet. Add the brown sugar and maple syrup. Cook until sugar has melted and it thickens, about 4 to 5 minutes. Stir in the bananas. Remove from the heat and add the rum. Return to the heat and cook, stirring, about 3 minutes.
- Melt 1 tablespoon of the butter in a skillet. Dip the bread, two slices at a time, into the custard. Remove and let the excess drip back into the bowl. Cook the bread for about 2 to 3 minutes per side or until golden brown. Repeat with the remaining bread, adding more butter each time.
- To serve, spoon the banana topping over the hot French toast.
