Cantonese Ground Beef

  1. Cook the ground beef and onion in a skillet until beef is browned and cooked through, about 5 minutes. Break it upinto small pieces as you stir. Add the garlic and cook 30 seconds.
  2. Add the sherry and cook about 1 minute. Add the chicken broth, oyster sauce, soy sauce, dark soy sauce (oradditional low-sodium soy sauce) and sesame oil. Cook until almost all of the liquid has evaporated, about 10 to 12minutes. Season with pepper.
  3. Stir in the peas. Cook about 2 minutes more.
  4. Combine the cornstarch and water to make a slurry. Add it to the meat mixture.
  5. Serve over rice. Garnish with chopped green onions and sliced jalapeno, if desired.
