Copy-Cat Panera Cream of Chicken and Wild Rice Soup

  1. Combine chicken and broth in pot over medium heat. Boil and add rice. Cover and remove from heat.
  2. In a saucepan over medium heat, melt butter. Add carrots, celery and onion and saute 5 minutes. Add rice seasoning.Cook 5 minutes more. Add flour gradually while stirring to create a roux. Saute roux 3-4 minutes.
  3. Whisk in cream a little at a time until smooth. Cook to thicken - 5 minutes.
  4. Stir cream mixture into broth. Cook medium heat for 15-20 minutes.
