Copy-Cat Panera Cream of Chicken and Wild Rice Soup
Serves 6-8
Ingredients
- 6 cups chicken broth
- 2 chicken breast halves
- 1 6 oz package long grain and rice blend, quick cook with seasoning packet
- 1/2 teaspoon black pepper
- 1/2 flour
- 3/4 cup butter
- 1 cup diced carrot
- 1 cup diced celery
- 1 cup diced onion
- 3 cups light cream
Instructions
- Combine chicken and broth in pot over medium heat. Boil and add rice. Cover and remove from heat.
- In a saucepan over medium heat, melt butter. Add carrots, celery and onion and saute 5 minutes. Add rice seasoning.Cook 5 minutes more. Add flour gradually while stirring to create a roux. Saute roux 3-4 minutes.
- Whisk in cream a little at a time until smooth. Cook to thicken - 5 minutes.
- Stir cream mixture into broth. Cook medium heat for 15-20 minutes.
