Edamame Stir-Fry Noodle Bowls
Serves 4
Ingredients
- 1 lime
- 2 scallions
- 8 oz shredded carrots
- 8 oz shelled edamame
- 8 oz bok choy and napa cabbage
- 8 T sweet soy glaze
- 2 oz sweet thai chili sauce
- 6 oz ramen noodles
- 1 T sesame seeds
- 1 T butter
Instructions
- Boil water in a medium pot
- Trim scallions, separating whites from greens.
- Heat oil in a large pan, medium high. Add carrots, white scallions and edamame. Cook 3-4 minutes.
- Add bok choy and cabbage. Season with salt and pepper. Cook 1-2 minutes.
- Stir in soy glaze, chili sauce and 1 T butter. Simmer and reduce heat to medium low.
- Add the noodles to boiling water. Cook until tender, 60 seconds.
- Drain noodles under cold water.
- Add drained noodles to the veggies. Cook 1-2 minutes.
- Remove from heat. Add juice of lime. Season with salt and pepper.
- Serve and garnish with scallion greens and sesame seeds.
