Edamame Stir-Fry Noodle Bowls

  1. Boil water in a medium pot
  2. Trim scallions, separating whites from greens.
  3. Heat oil in a large pan, medium high. Add carrots, white scallions and edamame. Cook 3-4 minutes.
  4. Add bok choy and cabbage. Season with salt and pepper. Cook 1-2 minutes.
  5. Stir in soy glaze, chili sauce and 1 T butter. Simmer and reduce heat to medium low.
  6. Add the noodles to boiling water. Cook until tender, 60 seconds.
  7. Drain noodles under cold water.
  8. Add drained noodles to the veggies. Cook 1-2 minutes.
  9. Remove from heat. Add juice of lime. Season with salt and pepper.
  10. Serve and garnish with scallion greens and sesame seeds.
